Unit Overview

Description

This unit provides an introduction to the Australian viticulture and wine industry, and places the Australian wine industry within a global context. Students learn about the wine production process through a hands-on winemaking activity, and spend time in a vineyard to develop their understanding of viticulture management and the role of climate. Concepts such as wine market position and regional identity are discussed, along with key elements of the regulations and frameworks that differentiate the Australian wine market from the European wine market. Students learn how to apply internationally recognised structured approach to wine tasting, and have the opportunity to practice this method in a supervised environment.

Outcomes

Students are able to (1) describe the major stages of the wine production process; (2) apply a formal method to wine evaluation and communicate evaluation outcomes; (3) recall key production details for the major wine producing regions of Australia; (4) explain the role of climate in viticulture; and (5) explain how the Australian wine industry is positioned with respect to major global competitors.

Assessment

Indicative assessments in this unit are as follows: (1) wine production process report; (2) sensory evaluation of wine test; and (3) quizzes. Further information is available in the unit outline.



Student may be offered supplementary assessment in this unit if they meet the eligibility criteria.
